Description

Juicy beef, melty cheese, and sautéed peppers rolled into bite-sized, low-carb treats. A perfect weeknight meal that satisfies cheesesteak cravings without the bread.


Ingredients

Beef and Cheese

  • 1 pound thinly sliced ribeye or shaved roast beef (Alternatively, you can use seasoned ground beef.)
  • 8 ounces provolone or white American cheese (A drizzle of Cheez Whiz can be used if preferred.)

Vegetables

  • 1 medium green bell pepper (Thinly sliced.)
  • 1 medium yellow onion (Thinly sliced.)
  • 1 cup optional mushrooms (Thinly sliced.)

Seasonings

  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika

Fat

  • 2 tablespoons butter or avocado oil (For sautéing.)

Wrap Base

  • 8 slices thin deli roast beef slices (Alternatively, egg white wraps or lettuce leaves can be used.)


Instructions

Preparation

  1. Heat a large skillet over medium heat with butter.
  2. Sauté onions until lightly golden, then add bell peppers and mushrooms. Cook until tender.
  3. Season with salt, pepper, garlic powder, and smoked paprika.

Cooking the Beef

  1. If using ribeye or shaved steak, sear in the pan for 1-2 minutes until just pink.
  2. If using ground beef, brown it fully and drain excess grease.

Assembly

  1. Lay out thin deli roast beef slices or chosen wraps.
  2. Add a spoonful of beef and veggie mixture, then top with cheese.
  3. Roll up tightly, keeping the seam side down.

Finishing

  1. Return the rolls to the hot skillet seam side down and sear until cheese melts and rolls are browned.
  2. Turn once to warm through on all sides.

Serving

  1. Let rolls rest for 2 minutes, then slice if desired.
  2. Serve hot with dipping sauce.

Notes

To prevent rolls from falling apart, drain beef well and do not overfill the rolls. Chill the assembled rolls for 10 minutes before cooking if desired.
