Description

These Keto Italian Sub Roll-Ups are a low-carb alternative to traditional sandwiches, combining fresh lettuce with flavorful Italian deli meats and cheeses for a satisfying and customizable meal.


Ingredients

For the Roll-Ups

  • 4 large leaves romaine or butter lettuce (For wrapping)
  • 4 slices salami (Thinly sliced)
  • 4 slices pepperoni (Thinly sliced)
  • 4 slices ham (Thinly sliced)
  • 2 slices provolone or mozzarella (For structure and melt)
  • 2 tablespoons banana peppers (Sliced)
  • 2 tablespoons sliced red onion (For crunch)
  • 1 medium tomato (Thinly sliced)
  • 2 tablespoons Italian vinaigrette (For drizzling)
  • 1 teaspoon Italian seasoning (For sprinkling)

Optional Extras

  • to taste olives (For added flavor)

Instructions

Preparation

  1. Rinse and pat dry the lettuce. If the ribs are too stiff, gently shave them down with a knife for better bending.
  2. Lay down one to two slices of cheese on each lettuce leaf to create a sturdy base.
  3. Overlap the salami, pepperoni, and ham on the cheese base for a tightly packed roll.
  4. Pile on the sliced veggies: thin tomato slices, a few red onion slivers, and banana peppers.
  5. Drizzle a small spoonful of Italian vinaigrette over the veggies, followed by a light sprinkle of Italian seasoning.
  6. Start rolling tightly from the short end of the lettuce leaf, tucking as you go. Secure with a toothpick or wrap in parchment if needed.
  7. Slice into two-bite pieces or enjoy whole depending on preference.

Notes

For added stability, use the largest leaves possible. If a leaf tears, double up with a second leaf and overlap the seam. Keep dressing on the side if packing for later consumption to avoid sogginess.
