Description

A refreshing, low-carb twist on classic Italian subs, these Keto Italian Lettuce Wraps are packed with flavor and perfect for a quick meal.


Ingredients

Lettuce

  • 5-6 leaves large lettuce leaves (iceberg or romaine) (Use iceberg for crunch or romaine for sturdiness.)

Meats

  • 2 slices salami (Thinly sliced.)
  • 2 slices turkey (Thinly sliced.)
  • 1 slice ham or pepperoni (Thinly sliced.)

Cheese

  • 1-2 slices provolone or mozzarella (Or shredded cheese sparingly.)

Toppings

  • 3 pieces pepperoncinis (Drained.)
  • 1/4 small red onion (Sliced thin.)
  • 1/4 cup fresh herbs (Chopped (parsley or basil).)

Dressing

  • 2 tablespoons olive oil (For dressing.)
  • 1 tablespoon red wine vinegar (For dressing.)
  • 1 pinch Italian seasoning (For seasoning.)
  • 1 squeeze lemon (For extra flavor.)
  • salt and pepper (To taste.)


Instructions

Preparation

  1. Wash and pat dry the lettuce leaves.
  2. Lay out a sheet of parchment larger than your hand-span.
  3. Slice the cheese, drain the pepperoncinis, and thinly slice the onions.

Assembly

  1. Place the parchment on your counter and overlap the lettuce leaves in the center to create a large rectangle.
  2. Layer the meats in thin, shingled rows, starting with salami, then turkey, and adding ham or pepperoni.
  3. Add cheese slices on top.
  4. Add toppings: a few pepperoncinis, a sprinkle of red onion, and chopped fresh herbs, then drizzle with Italian dressing.
  5. Fold the sides of the lettuce inward and use the parchment to roll it up like a burrito.
  6. Twist the ends of the parchment like a candy wrapper and slice in half if desired.

Notes

Keep everything dry and prepped before assembly. Using parchment helps maintain shape and prevent tearing.
