- 1 lb chicken, diced
- 1 lb sausage, sliced (Andouille preferred)
- 1 lb shrimp, peeled and deveined
- 1 medium bell pepper, chopped
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups rice
- 4 cups chicken broth
- 1 can diced tomatoes
- 2 teaspoons Cajun seasoning

Preparation
- In a large pot, heat olive oil over medium heat.
- Sauté the onions, bell pepper, and garlic until softened.
- Add the chicken and sausage, cooking until browned.
- Stir in the rice, tomatoes, broth, and Cajun seasoning.
- Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes until rice is cooked and liquid is absorbed.
- Fold in the shrimp and cook for an additional 5 minutes.
- Season with salt and pepper to taste, and garnish with green onions before serving.
Notes
Let the pot settle after adding rice; do not stir frequently to avoid undercooked rice. Cool leftovers and refrigerate for up to 3 days or freeze for up to 2 months.
