Preparation
- Preheat the oven to 400°F (200°C).
- Wash and trim the asparagus.
- Cut the potatoes into bite-sized pieces.
- In a large bowl, combine asparagus, potatoes, avocado oil, garlic powder, onion powder, Italian seasoning, paprika, pepper, and salt. Toss until everything is coated evenly.
Cooking
- Spread the mixture on a baking sheet in a single layer.
- Roast in the oven for about 25-30 minutes, or until the potatoes are tender and slightly golden, and the asparagus is cooked through.
- Serve warm.
