Description

Simple, saucy noodles that come together fast, flavored with garlic, bell pepper, and a savory sauce, making it a comforting weeknight meal.


Ingredients

Noodles and Sauce

  • 8 oz wide rice noodles
  • 1/4 cup soy sauce
  • 2 tbsp fish sauce
  • 1 tbsp chili paste
  • 1 tbsp sugar

Vegetables

  • 1 tbsp olive oil (for sautéing)
  • 3 cloves garlic, minced
  • 1 medium bell pepper, sliced
  • 1 medium onion, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas

Garnishes

  • Fresh bunch basil (for garnish)
  • to taste crushed red pepper (for serving)


Instructions

Preparation

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat. Sauté garlic, bell pepper, and onion until soft.
  3. Add broccoli and snap peas; stir-fry for 3-4 minutes.
  4. In a bowl, mix the soy sauce, fish sauce, chili paste, and sugar. Pour this sauce over the vegetables and cook for another minute.
  5. Add the cooked noodles to the pan and toss well to combine everything.

Serving

  1. Serve hot, garnished with fresh basil and crushed red pepper.

Notes

Let it cool to room temperature before storing leftovers. Keeps in the fridge for 3-4 days. Reheat gently with a splash of water or oil.
