Description

  • 2 large large potatoes (Boiled until tender)
  • 1 cup all-purpose flour (Plus more for dusting if needed)
  • 1 teaspoon baking powder (For lightness)
  • to taste Salt (Adds flavor)
  • as needed Butter (For frying)


Instructions

Preparation

  1. Boil the potatoes until tender, then drain and let cool.
  2. Peel the potatoes and mash them in a bowl.
  3. Mix in the flour, baking powder, and salt until a dough forms.
  4. Divide the dough into portions and roll each into a circle about 1/2 inch thick.
  5. Cut each circle into quarters.

Cooking

  1. Heat butter in a skillet over medium heat and fry the farls for about 3-4 minutes on each side until golden brown.
  2. Serve warm with eggs, bacon, or butter.

Notes

Cool leftovers and stack with parchment between layers for storage. Reheat in a skillet for best results. Can also be frozen for later use.
