- 1 lb Chicken (thighs or breasts) (Use thighs for juiciness or breasts for leaner meat.)
- 1 cup BBQ sauce (Choose a preferred flavor.)
- 1/4 cup Hot honey (Store bought or homemade.)
- 4 large Flour tortillas (Burrito size or fajita size.)
- 2 cups Melting cheese (cheddar, Monterey Jack, mozzarella blend) (Shred your own for best results.)
- 2 tbsp Butter or oil (For crisping the quesadillas.)
Optional Toppings
- 1 small Red onion (Thinly sliced.)
- 1/2 cup Jalapeños (Fresh or pickled.)
- 1/4 cup Cilantro (Chopped.)
Instructions
Cooking the Chicken
- Preheat the griddle to medium heat and lightly oil it.
- Season the chicken with salt, pepper, garlic powder, and smoked paprika.
- Cook the chicken until browned and cooked through. Slice or pound chicken for even cooking.
- Chop or slice the chicken into bite-size pieces on the griddle.
- Add BBQ sauce and stir to coat the chicken.
- Drizzle in hot honey and adjust flavors to taste.
Assembling and Cooking Quesadillas
- Lay tortillas flat on the griddle over medium to medium-low heat.
- Sprinkle cheese over half the tortilla.
- Add a layer of hot honey BBQ chicken and more cheese on top.
- Fold the tortilla over and press gently with a spatula.
- Add butter or oil around the edges for extra browning.
- Cook for 2 to 4 minutes per side until crisp and cheese is melted.
- Let sit for a minute before slicing.
