Ingredients

Main Ingredients

  • 1 lb Chicken (thighs or breasts) (Use thighs for juiciness or breasts for leaner meat.)
  • 1 cup BBQ sauce (Choose a preferred flavor.)
  • 1/4 cup Hot honey (Store bought or homemade.)
  • 4 large Flour tortillas (Burrito size or fajita size.)
  • 2 cups Melting cheese (cheddar, Monterey Jack, mozzarella blend) (Shred your own for best results.)
  • 2 tbsp Butter or oil (For crisping the quesadillas.)

Optional Toppings

  • 1 small Red onion (Thinly sliced.)
  • 1/2 cup Jalapeños (Fresh or pickled.)
  • 1/4 cup Cilantro (Chopped.)


Instructions

Cooking the Chicken

  1. Preheat the griddle to medium heat and lightly oil it.
  2. Season the chicken with salt, pepper, garlic powder, and smoked paprika.
  3. Cook the chicken until browned and cooked through. Slice or pound chicken for even cooking.
  4. Chop or slice the chicken into bite-size pieces on the griddle.
  5. Add BBQ sauce and stir to coat the chicken.
  6. Drizzle in hot honey and adjust flavors to taste.

Assembling and Cooking Quesadillas

  1. Lay tortillas flat on the griddle over medium to medium-low heat.
