Description

A bright, juicy weeknight meal featuring marinated chicken in a tangy honey lime sauce, served over fluffy cilantro lime rice and topped with avocado.


Ingredients

For the Chicken Marinade

  • 1/2 cup fresh lime juice (Fresh lime juice is preferred over bottled.)
  • 1/4 cup honey
  • 3 cloves garlic, minced (Use real garlic for better flavor.)
  • 2 tablespoons soy sauce (Can substitute with coconut aminos for a healthier option.)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon chili flakes (Optional for heat.)
  • 1 teaspoon lime zest (Adds deeper citrus flavor.)

For the Rice

  • 2 cups jasmine rice (Can substitute with basmati or cauliflower rice.)
  • 2.5 cups water (Rice to water ratio for jasmine rice.)
  • 1 teaspoon salt
  • 1 tablespoon lime juice (Adjust to taste.)
  • 1 teaspoon cilantro, chopped (For garnish.)

For Assembly

  • 2 avocados ripe avocados, sliced (Use ripe avocados for best texture.)

Instructions

Preparation

  1. Slice chicken breasts in half horizontally for even cooking.
  2. Whisk together the marinade ingredients in a bowl.
  3. Add chicken to the marinade, ensuring it is coated well. Marinate in the refrigerator for at least 30 minutes, or up to 8 hours.

Cooking

  1. Heat a large skillet over medium-high heat with a little oil.
  2. Shake off excess marinade from the chicken and add to the skillet.
  3. Cook chicken for 4 to 6 minutes on each side or until the internal temperature reaches 165°F.
  4. Allow the chicken to rest for 5 minutes before slicing.

Preparing Rice

  1. Rinse the jasmine rice until the water runs mostly clear.
  2. In a pot, add rice, water, and salt, then bring to a boil.
  3. Cover, reduce heat to low, and cook for 12 to 15 minutes.
  4. Remove from heat and let steam, covered, for 5 minutes. Fluff with a fork and stir in lime juice, zest, and chopped cilantro.

Assembly

  1. In a wide bowl or plate, add a layer of cilantro lime rice.
  2. Fan sliced chicken in the center, and tuck avocado slices alongside.
  3. Drizzle with any pan juices, finish with cilantro, a pinch of flaky salt, and lime wedges.

Notes

Pat chicken dry before marinating for better flavor absorption. Marinate and cook chicken without overcrowding the pan for a better sear. If you want a low-carb option, serve over a salad instead of rice.
