Ingredients
For the Chicken Marinade
- 1/2 cup fresh lime juice (Fresh lime juice is preferred over bottled.)
- 1/4 cup honey
- 3 cloves garlic, minced (Use real garlic for better flavor.)
- 2 tablespoons soy sauce (Can substitute with coconut aminos for a healthier option.)
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon chili flakes (Optional for heat.)
- 1 teaspoon lime zest (Adds deeper citrus flavor.)
For the Rice
- 2 cups jasmine rice (Can substitute with basmati or cauliflower rice.)
- 2.5 cups water (Rice to water ratio for jasmine rice.)
- 1 teaspoon salt
- 1 tablespoon lime juice (Adjust to taste.)
- 1 teaspoon cilantro, chopped (For garnish.)
For Assembly
- 2 avocados ripe avocados, sliced (Use ripe avocados for best texture.)

Instructions
Preparation
- Slice chicken breasts in half horizontally for even cooking.
- Whisk together the marinade ingredients in a bowl.
- Add chicken to the marinade, ensuring it is coated well. Marinate in the refrigerator for at least 30 minutes, or up to 8 hours.
Cooking
- Heat a large skillet over medium-high heat with a little oil.
- Shake off excess marinade from the chicken and add to the skillet.
- Cook chicken for 4 to 6 minutes on each side or until the internal temperature reaches 165°F.
- Allow the chicken to rest for 5 minutes before slicing.
Preparing Rice
- Rinse the jasmine rice until the water runs mostly clear.
- In a pot, add rice, water, and salt, then bring to a boil.
- Cover, reduce heat to low, and cook for 12 to 15 minutes.
- Remove from heat and let steam, covered, for 5 minutes. Fluff with a fork and stir in lime juice, zest, and chopped cilantro.
Assembly
- In a wide bowl or plate, add a layer of cilantro lime rice.
- Fan sliced chicken in the center, and tuck avocado slices alongside.
- Drizzle with any pan juices, finish with cilantro, a pinch of flaky salt, and lime wedges.
Notes
Pat chicken dry before marinating for better flavor absorption. Marinate and cook chicken without overcrowding the pan for a better sear. If you want a low-carb option, serve over a salad instead of rice.
