A quick and comforting dinner featuring grilled honey BBQ chicken served over creamy, garlicky Parmesan potatoes.
Ingredients
For the Chicken
- 4 pieces boneless, skinless chicken breasts
- 1 cup honey BBQ sauce
For the Potatoes
- 2 pounds baby potatoes (Halved)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
Preparation
- Preheat the grill to medium-high heat.
- Season the chicken breasts with salt and pepper, then brush with honey BBQ sauce.
- Grill the chicken for 6-7 minutes on each side, or until fully cooked.
- Meanwhile, wash and halve the baby potatoes.
- In a bowl, toss the potatoes with olive oil, minced garlic, and salt.
Cooking
- Transfer the potatoes to a baking dish, sprinkle with Parmesan cheese, and roast in the oven at 400°F (200°C) for 20-25 minutes, or until golden and tender.
- Serve the grilled chicken over a bed of cheesy garlic Parmesan potatoes and garnish with fresh parsley.
Notes
For added flavor, brush the chicken with sauce twice and consider adding a squeeze of lemon on the potatoes for brightness. If desired, you can parboil the potatoes for 5 minutes before roasting for quicker cooking.
