  • 1 cup jasmine or basmati rice (Rinsed before cooking.)
  • 1 onion, chopped (For flavor enhancement.)
  • 2 cloves garlic, minced (For added flavor.)
  • 2 tbsp oil (For searing the chicken.)
  • 1 cup chicken broth or water (For cooking the rice and deglazing.)
  • 1 tsp salt (To taste.)
  • 1 tsp pepper (To taste.)
  • 1/2 tsp smoked paprika (Optional, for extra smoky flavor.)

Vegetable Add-Ins

  • 1 bell pepper sliced (For sweetness and color.)
  • 1 cup corn (Optional addition for BBQ flavor.)

Instructions

Preparation

  1. Pat the chicken dry, season with salt, pepper, and smoked paprika.
  2. Sear the chicken in a hot skillet with a little oil until golden brown on both sides.

Cooking

  1. Lower the heat, add chopped onion, and then the garlic. Stir for about a minute.
  2. Deglaze the pan with a splash of broth or water, scraping up any browned bits. Stir in BBQ sauce and honey.
  3. Add the rinsed rice and remaining broth to the skillet, then nestle the chicken back in.
  4. Cover and bring to a gentle simmer. Cook until the rice is tender and the chicken is cooked through.
  5. Let sit off heat for 5-10 minutes before fluffing the rice.

Notes

For a more flavorful dish, use broth for cooking rice. Adjust flavors with vinegar if the sauce is too sweet.
