- 1/2 cup BBQ sauce (Choose a thick flavor you enjoy.)
- 1 cup jasmine or basmati rice (Rinsed before cooking.)
- 1 onion, chopped (For flavor enhancement.)
- 2 cloves garlic, minced (For added flavor.)
- 2 tbsp oil (For searing the chicken.)
- 1 cup chicken broth or water (For cooking the rice and deglazing.)
- 1 tsp salt (To taste.)
- 1 tsp pepper (To taste.)
- 1/2 tsp smoked paprika (Optional, for extra smoky flavor.)
Vegetable Add-Ins
- 1 bell pepper sliced (For sweetness and color.)
- 1 cup corn (Optional addition for BBQ flavor.)
- 1 cup spinach (Stirred in at the end to wilt.)
- 1 cup broccoli florets (Added halfway through cooking.)
- 1 cup black beans (For additional protein.)
Instructions
Preparation
- Pat the chicken dry, season with salt, pepper, and smoked paprika.
- Sear the chicken in a hot skillet with a little oil until golden brown on both sides.
Cooking
- Lower the heat, add chopped onion, and then the garlic. Stir for about a minute.
- Deglaze the pan with a splash of broth or water, scraping up any browned bits. Stir in BBQ sauce and honey.
- Add the rinsed rice and remaining broth to the skillet, then nestle the chicken back in.
- Cover and bring to a gentle simmer. Cook until the rice is tender and the chicken is cooked through.
- Let sit off heat for 5-10 minutes before fluffing the rice.
Notes
For a more flavorful dish, use broth for cooking rice. Adjust flavors with vinegar if the sauce is too sweet.
