Description

Delicious homemade sourdough croissants with flaky layers, slightly tangy flavor, and a buttery aroma, perfect for breakfast or brunch.


Ingredients

Dough Ingredients

  • 470 g All-purpose flour
  • 1 tsp Salt
  • 40 g Sugar
  • 150 g Sourdough starter (Active and bubbly)
  • 230 g Water (Room temperature)
  • 1 large Egg (For egg wash)

Butter Layer

  • 300 g Butter, unsalted (Cold)


Instructions

Preparation

  1. In a bowl, combine flour, salt, and sugar.
  2. In another bowl, mix the sourdough starter with water.
  3. Gradually add the starter mixture to the dry ingredients, mixing until a dough forms.
  4. Knead the dough until smooth, then let it rest for about an hour.

Lamination

  1. Roll the dough into a rectangle, then layer with cold butter, folding it multiple times to create flaky layers.
  2. Cut into triangles and roll up to form croissants.
  3. Let them rise for another hour.

Baking

  1. Preheat the oven to 375°F (190°C).
  2. Brush croissants with egg wash and bake for 20-25 minutes or until golden brown.

Notes

Use cold butter for distinct layers. Chill the dough if it feels sticky. You can experiment with flavors by adding grated lemon zest or using different fillings.
