Description

This Healthy Classic Carrot Cake uses whole wheat flour and applesauce instead of oil while maintaining the classic carrot cake flavor.


Ingredients

For the cake

  • 1.5 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 0.5 teaspoon nutmeg
  • 0.25 teaspoon salt
  • 0.75 cup unsweetened applesauce
  • 0.5 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1.5 cups grated carrots
  • 0.5 cup raisins (optional)
  • 0.5 cup chopped walnuts (optional)

For the frosting

  • 1 cup ricotta cheese
  • 1 tablespoon vanilla extract
  • 1-2 tablespoons honey or maple syrup


Instructions

Preparation

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch cake pan.
  2. In a bowl, mix the whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the applesauce, honey (or maple syrup), eggs, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients until just combined.
  5. Fold in the grated carrots, raisins, and walnuts if using.
  6. Pour the batter into the prepared cake pan and smooth the top.

Baking

  1. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Frosting

  1. While the cake is baking, prepare the frosting by mixing the ricotta, vanilla extract, and honey (or maple syrup) until smooth.
  2. Once the cake is baked and cooled, spread the ricotta frosting on top.

Notes

Serve warm or at room temperature. A thin slice pairs well with coffee. Store leftovers in the fridge for up to 4 days or freeze slices without frosting for up to 3 months.
