Ingredients
For the Skewers
- 1 pound chicken breast (Cut into chunks)
- 1 cup pineapple chunks
- 1 cup bell peppers (Cut into chunks)
For the Marinade
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 cloves garlic (Minced)
- 1 teaspoon ginger (Grated)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
Preparation and Marination
- Cut chicken into chunks and marinate in a mixture of soy sauce, honey, garlic, ginger, olive oil, salt, and pepper for at least 30 minutes.
Grilling
- Thread marinated chicken, pineapple, and bell peppers onto skewers.
- Preheat grill to medium heat and grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through.
- Serve hot and enjoy!
Notes
For best results, serve skewers straight off the grill with extra sauce or a squeeze of lime. Roasted sweet potatoes or a quick green salad make excellent sides. Store leftovers in an airtight container for 3-4 days.
