Ingredients

For the Chicken and Marinade

  • 1 lb chicken thighs or breasts (Thighs are recommended for juiciness.)
  • 1/4 cup olive oil
  • 1/4 cup lemon juice (Freshly squeezed is best.)
  • 3 cloves garlic, minced
  • 1 tbsp oregano
  • 1 tsp salt (Add to marinade for seasoning.)
  • 1/2 tsp pepper (Freshly ground preferred.)
  • 1/2 tsp paprika (Optional for extra flavor.)

For the Tzatziki Sauce

  • 1 cup Greek yogurt
  • 1 medium cucumber, grated (Squeeze out excess water.)
  • 1 tbsp fresh dill, chopped
  • 1 tbsp lemon juice (Freshly squeezed is best.)
  • 1 clove garlic, minced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp olive oil (For richness.)

For the Homemade Pita Flatbread

  • 3 cups all-purpose flour
  • 1 packet active dry yeast (2 1/4 tsp.)
  • 1 1/4 cups warm water (Around 110°F.)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp sugar (A pinch to feed the yeast.)

For Toppings

  • 1 medium tomato, sliced
  • 1/2 medium red onion, sliced
  • 1 cup shredded lettuce
  • 1/2 cup feta cheese, crumbled
  • 1 tbsp fresh dill (Optional garnish.)
  • 1 lemon wedges (For serving.)


Instructions

Preparation

  1. Start by marinating the chicken in a mixture of olive oil, lemon juice, garlic, oregano, salt, pepper, and optional paprika for at least 30 minutes, or up to overnight.
  2. For the tzatziki, grate the cucumber and squeeze out the excess water. Mix the cucumber with Greek yogurt, dill, garlic, lemon juice, salt, pepper, and olive oil. Allow it to sit for 10 minutes to develop flavors.
  3. Prepare the pita dough by mixing warm water, yeast, and sugar. Let it become foamy. Stir in flour, salt, and olive oil until a smooth dough forms. Knead for a few minutes and let it rise until doubled in size.

Cooking

  1. Cook the marinated chicken using your preferred method: grill for smoky flavor, sauté in a skillet for a golden crust, or roast in the oven for easy batch cooking.
  2. Roll out the risen pita dough and cook on a hot skillet for about 1-2 minutes per side until they puff up and have light brown spots.

Assembly

  1. Warm the pita and layer with tzatziki, followed by the grilled chicken, tomatoes, onions, lettuce, feta, and a squeeze of lemon.
  2. Serve the gyros with extra tzatziki on the side.

Notes

Chicken can be stored in the fridge for 3-4 days. Tzatziki lasts about 3 days. Freeze cooked chicken if desired. For a quick meal, use store-bought pita and marinate chicken for only 30 minutes.
