Description

Ingredients

  • 1 lb Ground turkey (Lean works best)
  • 2 medium Sweet potatoes (Scrubbed and cubed)
  • 1 can Black beans (Rinsed and drained)

Fresh Toppings

  • 1 medium Avocado (Sliced)
  • 1 cup Corn (Fresh, frozen, or canned)
  • 1 cup Pico de gallo (For added freshness)
  • 1/4 cup Cilantro (Optional, omit if disliked)

Spices and Seasoning

  • 1 teaspoon Smoked paprika (For seasoning)
  • 1 teaspoon Cumin (For seasoning)
  • 1/2 teaspoon Chili powder (Optional for heat)
  • 1/2 teaspoon Garlic powder (For flavor)
  • 1/2 teaspoon Onion powder (For flavor)
  • to taste Salt and pepper (To season to preference)

Optional Add-ins

  • 1 cup Bell peppers (Chopped)
  • 1 cup Zucchini (Chopped)

Instructions

Preparation

  1. Preheat oven and roast cubed sweet potatoes with olive oil and salt until tender and toasty.
  2. In a non-stick skillet, brown the ground turkey with spices until cooked through.
  3. Warm black beans in the pan or microwave until heated.

Assembly

  1. Scoop roasted sweet potatoes, turkey, and beans into serving bowls.
