Ingredients

Main Ingredients

  • 1 lb Ground beef (Use lean ground beef for a healthier option.)
  • 2-3 pieces Sweet potatoes (Two large or three small.)
  • 1 medium Onion (Yellow or red onion can be used.)
  • 3 cloves Garlic (Adjust to taste.)
  • 1 piece Bell pepper (Any color works.)
  • 2 tbsp Olive oil (For cooking.)
  • 1 tsp Salt (To taste.)
  • 1 tsp Pepper (To taste.)
  • 1 tsp Paprika
  • 1 tsp Cumin
  • 1 pinch Chili powder (Optional for a bit of spice.)
  • 1 cup Shredded cheese (Cheddar or any cheese you prefer.)
  • 1/2 cup Broth or water (Helps tenderize the sweet potatoes.)

Instructions

Preparation

  1. Peel and dice the sweet potatoes into half-inch cubes for faster cooking.
  2. Soak the diced potatoes in cold water for 5 minutes to remove extra starch, if desired.
  3. Dry the sweet potatoes with a towel before cooking.

Cooking

  1. Heat a large skillet over medium-high heat and add the ground beef.
  2. Brown the beef without stirring for the first few minutes to develop a crispy crust.
  3. Once the beef is nearly cooked through, add the diced onion and bell pepper. Cook until softened.
  4. Push the beef and veggies to one side of the skillet, then add olive oil and sweet potatoes.
  5. Let sweet potatoes cook for a few minutes, then stir all ingredients together.
  6. Add salt, pepper, spices, and a splash of broth or water. Cover and cook for 10-12 minutes until the potatoes are fork-tender.

Finishing Touches

  1. Once the potatoes are tender, sprinkle shredded cheese over the top and allow it to melt in the pan.
  2. Serve straight from the skillet with optional toppings like cilantro, sour cream, or avocado.

Notes

Don’t crowd the skillet while cooking. If the potatoes aren’t softening, add a lid and a splash more water.
