Ingredients
For the Chicken
- 1.5 lbs Chicken thighs, boneless skinless (Juicy and tender on the grill.)
- 2 tbsp Olive oil (For grilling.)
For the Sauce
- 3 cloves Garlic (Minced.)
- 1 tbsp Dijon mustard (Adds a tangy flavor.)
- 1 tbsp Honey (For sweetness.)
- 1/3 cup Mayonnaise (Base of the sauce.)
- 2 tbsp Soy sauce (For umami flavor.)
- 1/4 tsp Black pepper
- 1 tsp Paprika, smoked (For a smoky flavor.)
- 1/2 tsp Salt
- 1 pinch Salt
- 1 tsp Lemon juice or vinegar (Adds brightness.)
For Garnish
- 1 tbsp Parsley, Fresh (Chopped.)
Instructions
Preparation
- Preheat the grill to medium-high heat.
- In a bowl, mix together the mayonnaise, minced garlic, Dijon mustard, honey, soy sauce, smoked paprika, black pepper, salt, lemon juice, and olive oil.
- Toss the chicken thighs in the sauce until evenly coated.
- Thread the chicken onto skewers if desired.
Cooking
- Grill the chicken bites for approximately 6-8 minutes per side, or until cooked through and grill marks appear.
- Remove from the grill and let rest for a few minutes.
- Garnish with fresh parsley and serve with remaining sauce on the side.
Notes
This dish keeps well in the fridge. Grill can be substituted with a hot pan on the stovetop if desired. For leftovers, store chicken and sauce separately.
