Description

A simple yet delicious grilled chicken recipe with a creamy garlic sauce that elevates a weeknight dinner into something special.


Ingredients

For the Chicken

  • 1.5 lbs Chicken thighs, boneless skinless (Juicy and tender on the grill.)
  • 2 tbsp Olive oil (For grilling.)

For the Sauce

  • 3 cloves Garlic (Minced.)
  • 1 tbsp Dijon mustard (Adds a tangy flavor.)
  • 1 tbsp Honey (For sweetness.)
  • 1/3 cup Mayonnaise (Base of the sauce.)
  • 2 tbsp Soy sauce (For umami flavor.)
  • 1/4 tsp Black pepper
  • 1 tsp Paprika, smoked (For a smoky flavor.)
  • 1/2 tsp Salt
  • 1 pinch Salt
  • 1 tsp Lemon juice or vinegar (Adds brightness.)

For Garnish

  • 1 tbsp Parsley, Fresh (Chopped.)


Instructions

Preparation

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix together the mayonnaise, minced garlic, Dijon mustard, honey, soy sauce, smoked paprika, black pepper, salt, lemon juice, and olive oil.
  3. Toss the chicken thighs in the sauce until evenly coated.
  4. Thread the chicken onto skewers if desired.

Cooking

  1. Grill the chicken bites for approximately 6-8 minutes per side, or until cooked through and grill marks appear.
  2. Remove from the grill and let rest for a few minutes.
  3. Garnish with fresh parsley and serve with remaining sauce on the side.

Notes

This dish keeps well in the fridge. Grill can be substituted with a hot pan on the stovetop if desired. For leftovers, store chicken and sauce separately.
