Ingredients
Marinade
- 1 cup Greek yogurt (plain, full fat or 2 percent)
- 1 medium lemon (zest and juice)
- 3 cloves garlic (fresh, minced)
- 1 tbsp olive oil (just a splash for the marinade)
- 1 tsp oregano (dried)
- 1 tsp cumin (ground)
- 1 tsp paprika
- 1 tsp salt
- 1 tsp black pepper (freshly ground)
Chicken
- 1.5 lbs boneless skinless chicken thighs or breasts
Tortillas and Toppings
- 8 small flour or corn tortillas (plus extra for serving)
- 1 cup cucumber (diced)
- 1 cup tomatoes (diced)
- 1 small red onion (thinly sliced)
- 1 cup chopped romaine
- 0.5 cup feta cheese (optional)
- 0.25 cup olives (optional)
- 0.25 cup pepperoncini (optional)
- 0.25 cup fresh parsley or dill (optional)
Instructions
Marinating the Chicken
- In a bowl, mix Greek yogurt, lemon zest, lemon juice, minced garlic, oregano, cumin, paprika, salt, black pepper, and a drizzle of olive oil.
- Add the chicken and toss until every piece is coated. Cover and refrigerate for at least 30 minutes, preferably 2 to 8 hours.
- Before grilling, let the chicken sit at room temperature for 10 to 15 minutes.
Grilling the Chicken
- Preheat your grill to medium-high and clean the grates, lightly oiling them.
- Shake off excess marinade from the chicken, then grill thighs for 5 to 7 minutes per side, depending on thickness.
- Chicken is done at an internal temperature of 165°F. Let the chicken rest for 5 minutes before slicing against the grain.
Assembling Tacos
- Warm the tortillas.
- Layer sliced grilled chicken, crunchy greens, juicy toppings, and a spoonful of thick yogurt or sauce.
- Finish with feta and herbs.
