Description

This easy Chicken Avocado Melt Sandwich combines juicy chicken, creamy avocado, and melty cheese pressed between crispy bread for a quick and satisfying meal.


Ingredients

Main Ingredients

  • 2 cups cooked chicken, sliced or shredded (Rotisserie chicken works great)
  • 1 to 2 pieces ripe avocados, sliced or lightly mashed (Choose avocados that give slightly when pressed)
  • 4 to 6 slices cheese (cheddar, provolone, mozzarella, or pepper jack) (Pick a cheese that melts well)
  • 4 slices thick bread (sourdough preferred) or 2 sandwich rolls (Sourdough crisps well)

Condiments and Seasoning

  • as needed butter or mayo (For crisping the outside of the bread)
  • to taste salt, black pepper, garlic powder (Season to enhance flavors)

Optional Add-Ons

  • as desired sliced tomato, red onion, cooked bacon, jalapenos, or a swipe of chipotle sauce (Customize your sandwich)


Instructions

Preparation

  1. If your chicken is already cooked, warm it in a skillet for 2 to 3 minutes with a pinch of salt, pepper, and garlic powder.
  2. If cooking raw chicken, slice it thin, season and pan cook with a little oil until cooked through, then let it rest before slicing.

Building the Sandwich

  1. Layer the sandwich in this order: bread, cheese, chicken, avocado, another layer of cheese, and top with another slice of bread.

Cooking

  1. Spread butter or mayo on the outside of the bread and heat a nonstick skillet over medium low heat.
  2. Place the sandwich in the pan and cook for about 3 to 5 minutes per side, pressing lightly with a spatula.
  3. Adjust heat as necessary to avoid burning the bread while the cheese melts.

Notes
