Description

These Easy Beach Cupcakes bring summer vibes with their beachy look and taste. They are simple to make, fun to eat, and perfect for parties.


Ingredients

For the Cupcakes

  • ½ cup unsalted butter (at room temperature)
  • 1½ cups granulated sugar
  • 3 large eggs (room temperature)
  • ½ teaspoon vanilla extract
  • ½ teaspoon coconut extract
  • 1¼ cups buttermilk
  • 2¼ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt

For the Frosting

  • ¾ cup unsalted butter (softened)
  • 3 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 4 tablespoons milk (more or less, to reach desired consistency)
  • a few drops blue gel food coloring

For Decoration

  • as needed Nilla Wafers
  • as needed small paper umbrellas


Instructions

Preparation

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Beat the softened butter and sugar in a large bowl until smooth and airy, about 3–5 minutes.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla and coconut extracts.
  5. Gently incorporate the dry ingredients into the wet mixture, mixing on low speed only until combined.
  6. Add the buttermilk and blend, starting at low speed and ramping up to medium for about 2 minutes until smooth.
  7. Line your cupcake tin with paper liners and fill each one about ¾ full.

Baking

  1. Bake for around 14 minutes or until a toothpick comes out clean.
  2. Let them cool completely before frosting.

Frosting

  1. Beat the softened butter for the frosting until smooth and fluffy.
  2. Add powdered sugar and vanilla, then slowly mix in milk until smooth and easy to spread.
  3. Add a splash of blue food coloring.

Decoration

  1. Crush the Nilla Wafers into crumbs.
  2. Frost each cupcake and sprinkle crumbs on one side for a ‘sandy beach’ effect.
  3. Insert a mini umbrella and serve.

Notes

Use room temperature eggs and butter. Cool cupcakes fully before frosting. For added texture, consider adding toasted coconut on the sand.
