Description

A refreshing cucumber salad with a snap of red onion and fragrant dill, perfect for a quick side dish.


Ingredients

Main Ingredients

  • 2 large cucumbers (Thinly sliced.)
  • 1 small red onion (Finely chopped.)
  • 1/4 cup fresh dill (Chopped.)

Dressing

  • 1/4 cup olive oil (Use good quality olive oil.)
  • 2 tablespoons vinegar (White or apple cider vinegar.)
  • to taste Salt and pepper (Adjust to preference.)


Instructions

Preparation

  1. Wash and slice the cucumbers into thin rounds.
  2. Finely chop the red onion and add it to the cucumbers.
  3. In a small bowl, whisk together the olive oil, vinegar, salt, and pepper.
  4. Pour the dressing over the cucumber and onion mixture.
  5. Toss in the chopped dill and mix everything until well combined.
  6. Let the salad chill in the refrigerator for about 30 minutes before serving.

Notes

Taste for salt after the salad has chilled. For a crunchier salad, keep the dressing separate until right before serving.
