Description
Tender beef bites and soft potatoes simmered in a rich garlic butter sauce, perfect for a cozy dinner without the hassle of cooking.
Ingredients
Main Ingredients
- 2 pounds beef (sirloin tips, stew meat, or chuck cut into 1 to 1.5 inch chunks) (Choose a marbled cut for tenderness.)
- 1.5 pounds baby potatoes (gold or red, halved) (Russets also work if cubed.)
- 1/2 cup unsalted butter (For best flavor and control over salt.)
- 4 cloves fresh minced garlic (Garlic powder can add backup flavor.)
- 1 cup broth (beef or chicken) (Adjust based on preference.)
Seasonings
- 1 teaspoon kosher salt (Adjust to taste.)
- 1 teaspoon black pepper
- 1 teaspoon paprika (For warmth.)
- 1 tablespoon dried Italian herbs
Finishing Touches
- 1/4 cup fresh parsley (Chopped.)
- 1 teaspoon lemon zest (To brighten.)
- 1/4 cup Parmesan cheese (Sprinkled on top.)
Instructions
Preparation
- Season beef generously with salt, pepper, paprika, and Italian seasoning. Optionally, brown the beef in a skillet for extra flavor.
- Place potatoes at the bottom of the slow cooker. Add the seasoned beef on top.
- Melt butter with minced garlic, stir in Worcestershire and broth, then pour over beef and potatoes.
Cooking
- Cook on Low for 6 to 7 hours or on High for 3 to 4 hours, until the beef is fork-tender and potatoes are soft.
Finishing
- Finish with chopped parsley, a squeeze of lemon, and a sprinkle of Parmesan. Taste and adjust salt and pepper before serving.
Notes
Store leftovers in an airtight container for up to 4 days. To reheat, use a splash of broth or water to prevent drying out.
