Description

Ingredients

Main Ingredients

  • 2 pounds beef (sirloin tips, stew meat, or chuck cut into 1 to 1.5 inch chunks) (Choose a marbled cut for tenderness.)
  • 1.5 pounds baby potatoes (gold or red, halved) (Russets also work if cubed.)
  • 1/2 cup unsalted butter (For best flavor and control over salt.)
  • 4 cloves fresh minced garlic (Garlic powder can add backup flavor.)
  • 1 cup broth (beef or chicken) (Adjust based on preference.)

Seasonings

  • 1 teaspoon kosher salt (Adjust to taste.)
  • 1 teaspoon black pepper
  • 1 teaspoon paprika (For warmth.)
  • 1 tablespoon dried Italian herbs

Finishing Touches

  • 1/4 cup fresh parsley (Chopped.)
  • 1 teaspoon lemon zest (To brighten.)
  • 1/4 cup Parmesan cheese (Sprinkled on top.)


Instructions

Preparation

  1. Season beef generously with salt, pepper, paprika, and Italian seasoning. Optionally, brown the beef in a skillet for extra flavor.
  2. Place potatoes at the bottom of the slow cooker. Add the seasoned beef on top.
  3. Melt butter with minced garlic, stir in Worcestershire and broth, then pour over beef and potatoes.

Cooking

  1. Cook on Low for 6 to 7 hours or on High for 3 to 4 hours, until the beef is fork-tender and potatoes are soft.

Finishing

  1. Finish with chopped parsley, a squeeze of lemon, and a sprinkle of Parmesan. Taste and adjust salt and pepper before serving.
