Description
Savory meatballs in a melty cheese and golden onion sauce, perfect for a comforting meal with minimal cleanup.
Ingredients
Main Ingredients
- 1 bag frozen meatballs (Store brand is fine.)
- 1-2 large yellow onions (Slice thin for best results.)
- 4 cups beef broth (Use boxed or homemade.)
- 1 packet onion soup mix (This is a shortcut; trust me.)
- 2 cups shredded cheese (Gruyere or mozzarella works well.)
Seasonings
- 1 teaspoon thyme (Fresh or dried.)
- to taste salt (Adjust based on broth saltiness.)
- to taste black pepper (For seasoning.)
- optional garlic (Add if you’re feeling fancy.)
- optional Worcestershire sauce (For added depth.)
Instructions
Preparation
- Slice the onions as thin as possible.
- Place sliced onions at the bottom of the Crockpot.
- Add the frozen meatballs on top of the onions.
- In a bowl, whisk together the beef broth and onion soup mix. Pour over the meatballs.
- Set the Crockpot to low for 4 hours or high if you’re in a hurry.
- Before serving, sprinkle cheese on top and cover until melted.
Tips
- To prevent mushy meatballs, monitor cooking time, especially if using homemade.
- To thicken the sauce, crack the lid for the last 30 minutes.
Notes
These meatballs can easily be made ahead of time and taste even better the next day. Variations include using turkey or chicken meatballs and adding vinegar or crushed red pepper for a twist.
