Ingredients
Main Ingredients
- 2 pounds boneless, skinless chicken breasts or thighs (Thighs are more forgiving if cooked longer.)
- 1 packet ranch seasoning mix
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 block cream cheese, softened (Cube it for even melting.)
- 1 cup shredded cheddar cheese (Plus more for topping.)
- Salt and black pepper to taste
- 1-2 tablespoons water or chicken broth (If needed for consistency.)
Optional Add-ins
- cooked bacon, chopped green onions, red pepper flakes (For extra flavor.)
Serving Vehicles
- hamburger buns, tortillas, lettuce wraps, rice, mashed potatoes (Serve as preferred.)
Instructions
Preparation
- Place chicken in the slow cooker. Sprinkle with ranch seasoning, garlic powder, onion powder, and a pinch of pepper.
- Add the cream cheese on top in cubes. Cover and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours, until chicken is cooked through.
Cooking
- Shred the chicken right in the crock using two forks. Stir in cheddar until melted and smooth. Add a splash of broth if you want it looser.
- Taste and adjust salt. Fold in bacon and green onions if using. Serve warm with your favorite sides or vehicle.
Notes
For a creamier texture, add cheddar during the last 20 minutes on LOW. Leftovers can be stored in an airtight container for up to 4 days. Freezes well up to 2 months.
