Description

A creamy, cheesy slow cooker chicken dish that is easy to prepare and loved by the whole family.


Ingredients

Main Ingredients

  • 2 pounds boneless, skinless chicken breasts or thighs (Thighs are more forgiving if cooked longer.)
  • 1 packet ranch seasoning mix
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 block cream cheese, softened (Cube it for even melting.)
  • 1 cup shredded cheddar cheese (Plus more for topping.)
  • Salt and black pepper to taste
  • 1-2 tablespoons water or chicken broth (If needed for consistency.)

Optional Add-ins

  • cooked bacon, chopped green onions, red pepper flakes (For extra flavor.)

Serving Vehicles

  • hamburger buns, tortillas, lettuce wraps, rice, mashed potatoes (Serve as preferred.)


Instructions

Preparation

  1. Place chicken in the slow cooker. Sprinkle with ranch seasoning, garlic powder, onion powder, and a pinch of pepper.
  2. Add the cream cheese on top in cubes. Cover and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours, until chicken is cooked through.

Cooking

  1. Shred the chicken right in the crock using two forks. Stir in cheddar until melted and smooth. Add a splash of broth if you want it looser.
  2. Taste and adjust salt. Fold in bacon and green onions if using. Serve warm with your favorite sides or vehicle.

Notes

For a creamier texture, add cheddar during the last 20 minutes on LOW. Leftovers can be stored in an airtight container for up to 4 days. Freezes well up to 2 months.
