- 1 package cheese tortellini (fresh or frozen)
- 1 lb Italian sausage (spicy or mild) (depends on your mood)
- 1 jar pasta sauce (marinara or tomato basil)
- 1 cup shredded mozzarella
- 1/2 cup grated parmesan
- 1 onion chopped
- 3 cloves garlic (minced)
- 1/2 cup water or broth

- 1 mushroom (optional)
Instructions
Preparation
- Brown the sausage in a skillet, then drain it to remove excess grease.
- In the crockpot, add the browned sausage, chopped onion, minced garlic, pasta sauce, and water (or broth). Stir well.
Cooking
- Cover and cook on low for about 4 hours.
- Add the tortellini about 3 hours into the cooking process to prevent them from becoming mushy.
- Before serving, sprinkle mozzarella and parmesan on top and cover until melted.
Notes
For extra flavor, consider using sausage with fennel or browning onions with the sausage. Avoid over-saucing or adding tortellini too early. Use good quality cheese for best results. Leftovers can be kept in the fridge and will taste even better the next day.
