Description

A hearty, easy-to-make meal with cheese tortellini and sausage that cooks itself in a crockpot, perfect for busy nights.


Ingredients

Main Ingredients

  • 1 package cheese tortellini (fresh or frozen)
  • 1 lb Italian sausage (spicy or mild) (depends on your mood)
  • 1 jar pasta sauce (marinara or tomato basil)
  • 1 cup shredded mozzarella
  • 1/2 cup grated parmesan
  • 1 onion chopped
  • 3 cloves garlic (minced)
  • 1/2 cup water or broth

Optional Add-ins

  • 1 red bell pepper (optional)
  • 1 mushroom (optional)


Instructions

Preparation

  1. Brown the sausage in a skillet, then drain it to remove excess grease.
  2. In the crockpot, add the browned sausage, chopped onion, minced garlic, pasta sauce, and water (or broth). Stir well.

Cooking

  1. Cover and cook on low for about 4 hours.
  2. Add the tortellini about 3 hours into the cooking process to prevent them from becoming mushy.
  3. Before serving, sprinkle mozzarella and parmesan on top and cover until melted.

Notes

For extra flavor, consider using sausage with fennel or browning onions with the sausage. Avoid over-saucing or adding tortellini too early. Use good quality cheese for best results. Leftovers can be kept in the fridge and will taste even better the next day.
