This easy Crock Pot Bourbon Chicken recipe delivers sweet, sticky, and tender chicken with minimal effort, perfect for busy weeknights.


Ingredients

Main Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1/2 cup bourbon (Can substitute with apple juice or chicken broth.)
  • 1/2 cup soy sauce (Low-sodium option available.)
  • 1/2 cup brown sugar (Light or dark sugar can be used.)
  • 1/4 cup ketchup
  • 1/4 cup apple cider vinegar
  • 4 cloves garlic (Can be fresh or jarred.)
  • 1 teaspoon ground ginger
  • 1/2 teaspoon red pepper flakes (Adjust to taste.)
  • 2 tablespoons cornstarch (For thickening at the end.)
  • 1/2 cup water

Garnishes and Add-Ins

  • 1/4 cup green onions (Thinly sliced.)
  • 2 tablespoons sesame seeds
  • to taste red pepper flakes
  • 1/2 cup pineapple chunks (Optional for added sweetness.)


Instructions

Preparation

  1. Lay your chicken in the bottom of the slow cooker.
  2. Whisk together bourbon, soy sauce, brown sugar, ketchup, vinegar, garlic, ginger, and pepper flakes, then pour it over the chicken.

Cooking

  1. Cover and cook on low for 5 to 6 hours, or high for 3 hours.
  2. About 30 minutes before serving, whisk cornstarch with a splash of water and stir it into the sauce in the pot.
  3. Shred the chicken or keep it in big pieces based on your crowd’s preference.

Notes

Avoid overcooking the chicken. Set a timer, and do not exceed 6 hours on low. Thicker sauce? Add more cornstarch slurry.
