- 2 pounds boneless, skinless chicken thighs
- 1/2 cup bourbon (Can substitute with apple juice or chicken broth.)
- 1/2 cup soy sauce (Low-sodium option available.)
- 1/2 cup brown sugar (Light or dark sugar can be used.)
- 1/4 cup ketchup
- 1/4 cup apple cider vinegar
- 4 cloves garlic (Can be fresh or jarred.)
- 1 teaspoon ground ginger
- 1/2 teaspoon red pepper flakes (Adjust to taste.)
- 2 tablespoons cornstarch (For thickening at the end.)
- 1/2 cup water

Preparation
- Lay your chicken in the bottom of the slow cooker.
- Whisk together bourbon, soy sauce, brown sugar, ketchup, vinegar, garlic, ginger, and pepper flakes, then pour it over the chicken.
Cooking
- Cover and cook on low for 5 to 6 hours, or high for 3 hours.
- About 30 minutes before serving, whisk cornstarch with a splash of water and stir it into the sauce in the pot.
- Shred the chicken or keep it in big pieces based on your crowd’s preference.
Notes
Avoid overcooking the chicken. Set a timer, and do not exceed 6 hours on low. Thicker sauce? Add more cornstarch slurry.
