Description

Crispy Oven Baked Potato Skins are a warm, crunchy snack topped with melty cheese, salty bacon, and a dollop of sour cream. Perfect for weeknights and gatherings.


Ingredients

Main Ingredients

  • 4 slices Bacon
  • 2 tbsp Green onions
  • 4 large Russet potatoes
  • 2 tbsp Olive oil
  • 1.5 cups Cheddar cheese
  • 1/2 cup Sour cream

Seasoning

  • Salt (to taste)
  • Pepper (to taste)


Instructions

Preparation

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes and prick them with a fork. Bake the potatoes directly on the oven rack for about 45 minutes, or until tender.
  3. Remove the potatoes from the oven and let them cool slightly. Once cool enough to handle, cut them in half lengthwise and scoop out some of the potato flesh, leaving about 1/4 inch of potato inside the skin.

Baking

  1. Brush the inside of the potato skins with olive oil and season with salt and pepper.
  2. Place the potato skins on a baking sheet, cut side up.
  3. Fill each skin with shredded cheddar cheese and crumbled bacon.
  4. Return the potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  5. Remove from the oven and top with sour cream and chopped green onions.
  6. Serve hot and enjoy!

Notes

For extra crisp, brush the skins with a touch more olive oil before the final bake. Store leftovers in an airtight container for 2 to 3 days in the fridge, then reheat in the oven.
