  • 3-4 cups cooked chicken, chopped or shredded (Use chicken breast, thighs, or rotisserie chicken.)
  • 8 oz cream cheese, softened (Soften for easy mixing.)
  • 1 cup sour cream or plain Greek yogurt (For tang and extra creaminess.)
  • 2 cups shredded cheddar (Plus extra for topping.)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • to taste salt
  • to taste pepper
  • 2 cups cauliflower rice or chopped steamed cauliflower (Optional for adding volume.)
  • 2 cups broccoli florets or spinach (Optional for extra veggies.)
  • 1 cup crushed pork rinds or extra cheese (Optional crunch topping.)


Instructions

Preparation

  1. Preheat the oven to 375°F.
  2. In a bowl, mix the softened cream cheese with sour cream until smooth. Add garlic powder, onion powder, salt, and pepper.
  3. Fold in the cooked chicken. If using, mix in steamed broccoli, spinach, or cauliflower rice.
  4. Stir in most of the shredded cheddar cheese, reserving some for the top.
  5. Spread the mixture into a baking dish and top with the reserved cheese. Bake for 20-25 minutes, until bubbly. Broil for 1-2 minutes, if desired for browning.

Notes

For optimal creaminess, ensure cream cheese is softened, and drain excess moisture from vegetables. Let sit for 5-10 minutes after baking before serving.
