Ingredients

  • 8 oz Cream cheese, softened (For a rich, smooth base.)
  • 1/2 cup Sour cream or Greek yogurt (To loosen up the dip.)
  • 1 cup Shredded cheese (cheddar, Monterey Jack, or a mix) (Adds flavor and creaminess.)

Vegetables & Seasonings

  • 2 medium Jalapenos, chopped (Fresh or pickled depending on preference.)
  • 1 tsp Garlic powder (For added flavor.)
  • 1 tsp Onion powder (For added flavor.)
  • 1/2 tsp Salt (To taste.)
  • 1/4 tsp Black pepper (To taste.)
  • 1 tsp Lime juice (Optional, for added brightness.)
  • 2 tbsp Chopped green onion (Optional for garnish.)
  • 1/2 tsp Smoked paprika (Optional for flavor.)


Instructions

Preparation

  1. Set the cream cheese out for 20 to 30 minutes to soften. If you forget, microwave it for about 10 seconds at a time, but do not melt it.
  2. In a medium bowl, mix the softened cream cheese and sour cream until mostly smooth. A fork works, but a hand mixer makes it extra fluffy.
  3. Stir in the shredded cheese, jalapenos, garlic powder, onion powder, salt, and black pepper. Taste it and adjust the seasoning if necessary.
  4. Scoop the mixture into a small baking dish and spread it evenly.
  5. If using fresh jalapenos, sauté them for 2 to 3 minutes before mixing to mellow their sharpness.

Baking

  1. Preheat the oven to 375°F (190°C).
  2. Bake the dip for about 18 to 25 minutes, until hot and bubbly with a lightly golden top.
  3. For a more browned top, broil for 1 to 2 minutes at the end, watching carefully to prevent burning.
  4. Let the dip sit for 5 minutes before serving to thicken slightly.

Notes

This dip can be made ahead of time; just mix everything and refrigerate up to 2 days before baking. For freezing, prepare unbaked dip in a freezer-safe dish for up to 1 month.
