Description

Ingredients

Fresh Ingredients

  • 4 cups Yukon gold potatoes, diced small (Keeps the soup tender and creamy.)

Canned Ingredients

  • 2 cans Rotel or diced tomatoes with green chiles, undrained (Provides a kick.)
  • 1 can Corn, drained or 1.5 cups frozen (Adds sweetness.)
  • 1 can Pinto or black beans, drained and rinsed (For protein.)
  • 4 cups Beef broth (Base of the soup.)

Protein Options

  • 1 to 1.5 pounds Ground beef, browned and drained (Can be swapped with sausage or turkey.)

Creamy Ingredients

  • 4 to 6 ounces Cream cheese, room temperature (Incorporated for creaminess.)
  • 1 cup Heavy cream or half-and-half (For richness.)

Seasonings

  • 1 tablespoon Ranch seasoning
  • 2 teaspoons Chili powder
  • 1 teaspoon Ground cumin
  • Salt and pepper to taste
  • 1 teaspoon Smoked paprika (optional) (For a smoky flavor.)

Instructions

Preparation

  1. Brown the ground beef in a skillet, drain the fat, and season it with a pinch of salt and pepper.
  2. Add the beef, diced potatoes, onion, garlic, tomatoes, corn, beans, and broth to the slow cooker.
  3. Stir in chili powder, cumin, ranch seasoning, and smoked paprika if using.

Slow Cook

  1. Cook on Low for 6 to 8 hours or on High for 3 to 4 hours, until the potatoes are fork-tender.
  2. Cube the cream cheese and let it come to room temp so it melts smoothly.

Finish and Serve

  1. Stir in the cream cheese until fully melted, then pour in the heavy cream.
