- 2 large chicken breasts (Cut in half lengthwise)
- 1/2 teaspoon garlic powder

- 1 tablespoon olive oil
- 2 tablespoons butter (divided)
- 3 cloves garlic, minced
- 1/2 cup dry white wine (Use extra broth if unavailable)
- 1/4 cup chicken broth
- 1/4 teaspoon Italian seasoning
- 1 cup heavy or whipping cream
- 2 cups fresh baby spinach (loosely packed)
- 1/2 cup freshly grated parmesan cheese (for topping)
Instructions
Preparation
- Cut the chicken breasts in half lengthwise to create 4 thinner pieces.
- Season both sides with garlic powder, salt, and pepper, then coat in flour.
Cooking
- Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat and cook the chicken for 4-5 minutes per side until golden. Remove chicken from the pan.
- In the same skillet, add remaining butter and minced garlic; cook for about 30 seconds.
- Pour in the wine, chicken broth, and Italian seasoning; cook for 3-5 minutes until reduced.
- Stir in cream and let bubble for 2 minutes, then add spinach.
- Return chicken to the skillet and cook over medium heat for another 4-5 minutes, or until cooked through and sauce thickens.
- Before serving, sprinkle parmesan cheese on top and season with additional salt and pepper as needed.
Notes
Serve it over pasta, rice, or mashed potatoes. You can also ladle it over toasted bread. Allow leftovers to cool before refrigerating and reheat gently to maintain cream consistency.
