Description

Ingredients

Beef Base

  • 1 lb ground beef (80-90% lean) (For a juicy base without too much grease.)
  • 1 medium onion, chopped (The classic flavor starter.)
  • 1 medium bell pepper, chopped (Adds fresh crunch and sweetness.)
  • 2 cloves garlic, minced (For flavor.)
  • 1 can diced tomatoes with green chiles (Adds gentle kick and tang.)
  • 1 can black beans or pinto beans, drained and rinsed (Choose one; controls moisture.)
  • 1 cup corn, canned or frozen (Sweet pops in every bite.)
  • 1 packet taco seasoning (Adds warmth without fuss.)
  • 1/2 cup BBQ sauce or tomato sauce (optional) (For depth.)

Cheese Layer

  • 1 cup cheddar or Colby Jack cheese, shredded (For melty goodness.)
  • 1 box Jiffy cornbread mix (Mix with eggs and milk as per the box.)
  • 1 large egg (As required for cornbread mix.)
  • 1/2 cup milk (As required for cornbread mix.)

Seasoning

  • to taste salt
  • to taste pepper
  • 1 pinch sugar (Balances the savory flavors.)


Instructions

Preparation

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet over medium heat, cook ground beef with onion and bell pepper until meat is browned and veggies are soft. Drain any excess fat.
  3. Stir in garlic, then add taco seasoning, diced tomatoes with green chiles, corn, and black beans. Simmer for 3 to 5 minutes until slightly thickened.
  4. Adjust salt and pepper to taste.

Assembly

  1. Remove the skillet from heat and stir in half the cheese until it melts.
  2. Transfer the beef mixture to a 9×13 baking dish if desired, then sprinkle additional cheese on top.
  3. Prepare cornbread mix according to package directions adding a pinch of sugar and splash of milk if needed. Stir until just combined.
  4. Pour cornbread mixture over beef layer, spreading gently to the edges.

Baking

  1. Bake for 18 to 25 minutes until the top is golden and a toothpick inserted comes out clean.
  2. Let it rest for 10 minutes before slicing to keep layers intact.

Notes

For best results, do not overmix the cornbread batter and ensure the beef mixture is not soupy before adding the cornbread.
