Description

Small, comforting bites made with cottage cheese and eggs, perfect for breakfast, lunch, or a late snack.


Ingredients

Main Ingredients

  • 1 cup cottage cheese (Use full-fat for richer bites.)
  • 6 large eggs (Whole eggs preferred for richness.)
  • 1/2 cup cooked bacon, chopped (Can be swapped with veggies or omitted.)
  • to taste salt
  • to taste pepper

Optional Ingredients

  • 1/4 cup shredded cheese (Cheddar or your cheese of choice can be added.)
  • herbs or vegetables (Chopped chives, parsley, cooked spinach, or bell pepper can be folded in.)


Instructions

Preparation

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, combine cottage cheese, eggs, salt, and pepper.
  3. Stir in the chopped bacon and any optional ingredients you desire.

Baking

  1. Pour the mixture into the prepared muffin tin, filling each cup about 2/3 full.
  2. Bake for 20-25 minutes or until the egg bites are set and lightly golden on top.
  3. Allow to cool slightly before removing from the tin. Serve warm or store for meal prep.

Notes

Leftovers can be stored in an airtight container for 3-4 days. Reheat in the microwave for 20-30 seconds. Can also be frozen for 1-2 months.
