Description

Deliciously soft and fluffy cinnamon rolls packed with cookie bits and topped with cream cheese frosting, perfect for a cozy breakfast or a fun treat with kids.


Ingredients

For the dough

  • 1 cup warm milk (Warm, not hot, to activate yeast)
  • 2 teaspoons active dry yeast
  • 1 tablespoon sugar (For activating the yeast)
  • 2 large eggs (At room temperature)
  • 1/4 cup melted butter
  • 1 teaspoon salt
  • 4-5 cups all-purpose flour (Add gradually until a soft dough forms)

For the filling

  • 1/2 cup softened butter (For spreading)
  • 3/4 cup brown sugar (Packed)
  • 1 tablespoon cinnamon
  • 1 pinch salt
  • 1 cup crushed chocolate sandwich cookies

For the frosting

  • 8 oz cream cheese (Softened)
  • 1/4 cup butter (Softened)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk (Add more if needed for consistency)

For decorating

  • 1/2 cup extra crushed cookies
  • 1/2 cup mini chocolate chip cookies
  • 1 package candy eyes
  • optional blue food coloring (For a Cookie Monster look)


Instructions

Preparation

  1. Mix warm milk with sugar and sprinkle yeast on top. Let it sit for 5-10 minutes until foamy.
  2. Stir in eggs, melted butter, and salt. Gradually add flour until a soft dough forms.
  3. Knead the dough until smooth and slightly stretchy.
  4. Place the dough in a greased bowl, cover, and let it rise until doubled (1-1.5 hours).

Filling and Rolling

  1. Roll the dough into a large rectangle.
  2. Spread softened butter across the surface, then sprinkle brown sugar, cinnamon, salt, and crushed cookies.
  3. Roll tightly from the long side and slice into 12 rolls.
  4. Place in a baking dish, cover, and let rise for another 30-45 minutes.

Baking

  1. Preheat oven to 350°F (175°C) and bake the rolls for 22-28 minutes or until lightly golden.

Frosting

  1. Beat softened cream cheese and butter until smooth. Gradually add powdered sugar, then mix in vanilla and milk.
  2. Add blue food coloring if desired.

Assembling

  1. Frost warm rolls and sprinkle with crushed cookies. Add candy eyes and mini chocolate chip cookies as desired.

Notes

For softer rolls, avoid overbaking and allow adequate rise times. You can prepare these rolls the day before and refrigerate overnight.
