Description

A cozy and colorful soup that’s simple to make with a variety of everyday ingredients, bringing warmth and comfort to your weeknight dinners.

Ingredients

Base Ingredients

  • 1 tablespoon neutral oil or coconut oil (Used for sautéing.)
  • 1 medium onion, chopped (Aromatics.)
  • 2 cloves garlic, minced (Aromatics.)
  • 1 tablespoon fresh ginger, minced (Aromatics.)

Curry Base

  • 2 tablespoons red curry paste (Can substitute with yellow curry powder.)
  • 1 can coconut milk (full-fat or light) (Adds creaminess to the soup.)
  • 4 cups vegetable or chicken broth (Used to thin and carry the flavors.)

Vegetables

  • 1 cup bell peppers, sliced (Brings sweetness and color.)
  • 1 cup carrots, sliced (Adds crunch and sweetness.)
  • 1 cup mushrooms, sliced (Contributes savory depth.)
  • 1 cup snap peas (Brings snap and freshness.)
  • 2 cups baby spinach or kale (Adds leafy greens.)

Seasoning and Finishing

  • 2 tablespoons lime juice (Adds acidity.)
  • 1 tablespoon fish sauce or soy sauce (For umami flavor.)
  • 1/2 teaspoon chili flakes (For optional heat.)

Fresh Herbs and Toppings

  • 1/4 cup cilantro, chopped (For garnish.)
  • 1/4 cup sliced green onions (For garnish.)
  • optional lime wedges (For serving.)
  • optional toasted coconut flakes or chopped peanuts (For added crunch.)

Instructions

Build the Base

  1. Heat oil in a pot over medium heat. Sauté onion until soft. Add garlic and ginger, cooking until fragrant.

Add Liquids and Veggies

  1. Stir in the curry paste and let it toast briefly.
  2. Pour in the broth, then stir in the coconut milk. Add firm veggies like carrots and mushrooms first, and simmer until almost tender.
  3. Add quicker-cooking veggies like bell peppers and leafy greens near the end.

Season and Finish

  1. Stir in fish sauce or soy sauce for umami, then add lime juice to brighten the flavors.
  2. Taste and adjust salt, heat, and acidity to your liking. Add herbs right before serving.

Make it a Meal

  1. You can stir in cooked rice noodles, or add proteins like shredded chicken, shrimp, or tofu.

Notes

For the best flavor, bloom the curry in oil and finish with fresh herbs. Use any vegetables you have on hand to customize this soup to your liking.
