A quick and flavorful dish featuring marinated chicken thighs served with a bright chimichurri sauce, perfect for busy weeknight dinners.
Ingredients
For the Chimichurri Sauce
- 1 cup fresh parsley (Fresh parsley is the star of the dish.)
- 1/2 cup olive oil
- 1/4 cup red wine vinegar (Can substitute with apple cider vinegar or lemon juice.)
- 4 cloves garlic (Feel free to add more garlic if preferred.)
- 1 teaspoon red pepper flakes (Adjust for spice level.)
- Salt and pepper to taste
For the Chicken
- 4 pieces chicken thighs (Bone-in or boneless can be used.)

Preparation
- In a blender or food processor, combine parsley, olive oil, red wine vinegar, garlic, red pepper flakes, salt, and pepper. Blend until smooth.
- Reserve half of the chimichurri sauce for serving. Marinate the chicken thighs in the remaining sauce for at least 30 minutes.
- Preheat your grill to medium-high heat.
Cooking
- Grill the marinated chicken thighs for about 6-7 minutes per side, or until fully cooked.
- Serve the chicken with the reserved chimichurri sauce drizzled on top.
Notes
Cool any leftovers within an hour and store in an airtight container. Chicken lasts 3–4 days in the fridge.
