Description

A comforting and wholesome chicken zucchini bake that’s simple to prepare with big flavors, ideal for weeknight dinners.


Ingredients

Main Ingredients

  • 1 lb Boneless skinless chicken breast (You can use thighs for extra juiciness.)
  • 2 medium Zucchini (Firm and bright, small to medium size to hold less water.)
  • 1 cup Greek yogurt or light sour cream (Adds creaminess and protein.)
  • 1 cup Shredded cheese (part-skim mozzarella or mozzarella/parmesan mix) (For a melty top.)
  • 1 small Onion, minced (Fresh is best.)
  • 3 cloves Garlic, minced (Fresh is best.)
  • 1 tbsp Olive oil (To coat the chicken.)

Seasonings

  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tbsp Italian seasoning
  • 1 tsp Smoked paprika
  • 1 squeeze Lemon juice (For brightening flavors.)

Optional Topping

  • 1/4 cup Whole wheat breadcrumbs (For added crunch.)


Instructions

Preparation

  1. Preheat the oven to 400°F and lightly grease a 9×13-inch baking dish.
  2. Trim chicken and cut into 1-inch cubes. Pat dry, then toss with olive oil, salt, pepper, smoked paprika, and Italian seasoning. Squeeze lemon juice over the chicken.
  3. If time allows, let the chicken marinate for 15-20 minutes or at least 5 minutes.
  4. Cut zucchini into half moons about 1/3 inch thick. Spread on a towel, sprinkle lightly with salt, and let sit for 10-15 minutes to draw moisture. Pat dry thoroughly.

Cooking

  1. In a separate bowl, mix Greek yogurt, minced garlic, a pinch of lemon zest, and half of the shredded cheese.
  2. Toss zucchini with a little olive oil, salt, and pepper.
  3. Layer the zucchini in the prepared dish, scatter the seasoned chicken on top, and spoon the yogurt mixture over, spreading gently. Finish with remaining cheese and optional breadcrumbs.
  4. Bake for 22 to 28 minutes, until chicken is cooked through (165°F) and the top is bubbling. Optionally, broil for 1-2 minutes for added color.
  5. Let rest for 5 minutes before serving.

Notes

Ensure to pat the chicken and zucchini dry to avoid a watery casserole. Adjust seasonings to taste. This casserole can be assembled ahead and refrigerated for 24 hours before baking.
