Description

Ingredients

Main Ingredients

  • 4 pieces chicken thighs (Bone-in skin-on preferred for more flavor.)
  • 2 tablespoons olive oil
  • 1 piece onion, chopped
  • 2 pieces carrots, chopped
  • 2 pieces celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 cup white wine (Use a dry white wine you would drink.)
  • 2 cups chicken broth
  • 1 teaspoon thyme (Fresh or dried.)
  • 1 piece bay leaf
  • to taste salt and pepper (Salt the chicken before browning.)
  • Creamy polenta or risotto for serving (Soaks up the sauce nicely.)


Instructions

Preparation

  1. In a large pot, heat olive oil over medium heat. Add the chicken thighs and brown on all sides.
  2. Remove the chicken and add the chopped onion, carrots, celery, and garlic. Sauté until vegetables soften.
  3. Deglaze the pot with white wine, scraping up any bits stuck to the bottom.
  4. Return the chicken to the pot and add chicken broth, thyme, bay leaf, salt, and pepper.
  5. Bring to a simmer, cover, and cook on low for about 1.5 to 2 hours until the chicken is tender.
  6. Serve the chicken over creamy polenta or risotto.

Notes

Cool leftovers and store in airtight containers for up to 3 days. You can freeze portions for up to 3 months. Make polenta while chicken simmers for timed efficiency.
