Description

A flavorful and nutritious one-bowl dinner featuring roasted chicken and sweet potatoes, customizable with various toppings and seasonings for a satisfying meal.


Ingredients

Main Ingredients

  • 1 lb Boneless chicken breasts or thighs (Thighs are juicier and more forgiving.)
  • 2 medium Sweet potatoes (Cubed and tossed with oil and seasonings.)
  • 2 tbsp Olive oil (Can substitute with avocado oil.)
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Optional Add-Ins

  • 1 medium Red onion (Diced, if desired.)
  • 1 cup Bell pepper (Diced, if desired.)

Toppings

  • 1/2 cup Crumbled goat cheese (For a tangy flavor.)
  • 1 cup Sautéed kale or spinach (For added nutrition.)
  • 1 medium Avocado (Diced.)
  • 1/4 cup Green onions (Chopped, for garnish.)
  • 1/4 cup Cilantro (Chopped, for garnish.)


Instructions

Preparation

  1. Preheat the oven to 425°F.
  2. Dice the sweet potatoes and toss them with olive oil, salt, and seasoning. Spread them on one side of a baking sheet.
  3. Cut chicken into chunks and toss with olive oil, salt, pepper, and your favorite seasoning. Place on the other side of the baking sheet.

Cooking

  1. Roast the sweet potatoes and chicken together for 20-25 minutes, flipping the sweet potatoes halfway through the cooking time.
  2. Remove from the oven and let the chicken rest briefly.

Assembly

  1. Build your bowl starting with the roasted sweet potatoes and chicken.
  2. Add any optional toppings and drizzle with a sauce of your choice.

Notes

Leftovers taste great and can be stored in the fridge for about three days. Ideal for meal prep and easy lunches.
