- 1 lb Boneless chicken breasts or thighs (Thighs are juicier and more forgiving.)
- 2 medium Sweet potatoes (Cubed and tossed with oil and seasonings.)
- 2 tbsp Olive oil (Can substitute with avocado oil.)
- 1 tsp Salt
- 1/2 tsp Black pepper
Optional Add-Ins
- 1 medium Red onion (Diced, if desired.)
- 1 cup Bell pepper (Diced, if desired.)
Toppings
- 1/2 cup Crumbled goat cheese (For a tangy flavor.)
- 1 cup Sautéed kale or spinach (For added nutrition.)
- 1 medium Avocado (Diced.)
- 1/4 cup Green onions (Chopped, for garnish.)
- 1/4 cup Cilantro (Chopped, for garnish.)
Instructions
Preparation
- Preheat the oven to 425°F.
- Dice the sweet potatoes and toss them with olive oil, salt, and seasoning. Spread them on one side of a baking sheet.
- Cut chicken into chunks and toss with olive oil, salt, pepper, and your favorite seasoning. Place on the other side of the baking sheet.
Cooking
- Roast the sweet potatoes and chicken together for 20-25 minutes, flipping the sweet potatoes halfway through the cooking time.
- Remove from the oven and let the chicken rest briefly.
Assembly
- Build your bowl starting with the roasted sweet potatoes and chicken.
- Add any optional toppings and drizzle with a sauce of your choice.
Notes
