Ingredients

Main Ingredients

  • 1 lb Ground beef (Use 85% lean for best flavor.)
  • 1 cup Rice (Long grain white rice recommended.)
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Beef or chicken broth
  • 15 oz Tomato sauce or diced tomatoes
  • 1 cup Cheese, shredded (cheddar recommended) (Shred your own for best melting.)
  • 1 tsp Salt (Adjust to taste.)
  • 1 tsp Pepper (Adjust to taste.)
  • optional Frozen peas, corn, or chopped bell peppers (Add as desired.)


Instructions

Preparation

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13 baking dish.
  2. In a large skillet, brown the ground beef over medium-high heat.
  3. Add chopped onion and cook for 3-4 minutes, then add minced garlic for 30 seconds.
  4. Drain excess grease if needed.
  5. Stir in rice, broth, and tomato sauce. Add salt, pepper, and your choice of spices.
  6. Pour mixture into the prepared baking dish and cover tightly with foil.

Baking

  1. Bake in the preheated oven until rice is tender, usually 35-45 minutes for white rice.
  2. Remove foil, top with cheese, and bake for an additional 8-12 minutes until melted and bubbly.
  3. Let it sit for 5-10 minutes before scooping so it sets up.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days. Reheat with a splash of broth or water to loosen it up.
