  • 1 lb Ground beef (lean) (Can substitute with ground turkey)
  • 1 cup Rice (long grain white recommended) (Use uncooked for baking or leftover cooked rice)
  • 1 medium Onion (Chopped)
  • 2 cloves Garlic (Minced)
  • 1 can Tomato sauce or diced tomatoes (For moisture and tang)
  • 1 cup Beef broth (Or chicken broth)
  • 1 cup Sour cream or Greek yogurt (For creaminess)
  • 2 cups Cheese (cheddar recommended) (Shredded, use a mix if desired)
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Paprika
  • 1 tsp Italian seasoning or taco seasoning (Depending on mood)

Optional Add-Ins

  • 1 cup Frozen corn (Or peas, chopped bell peppers, spinach)


Instructions

Preparation

  1. Preheat your oven to 375°F. Lightly grease a 9×13 baking dish.
  2. Brown the beef in a large skillet with chopped onion. Add garlic when beef is mostly cooked and cook for about 30 seconds.
  3. Stir in seasonings, tomato sauce (or diced tomatoes), broth, and rice. Ensure uncooked rice is fully covered by liquid.
  4. Add sour cream or Greek yogurt and stir in half of the cheese. Adjust salt to taste.

Baking

  1. Cover the dish with foil and bake until rice is tender, 30 to 45 minutes.
  2. Top with remaining cheese and bake uncovered for an additional 5 to 10 minutes, until bubbly.
  3. Let it rest for 10 minutes before serving.
