Description

A fluffy, cheesy, and sturdy bread that fits perfectly into a carnivore diet, free of grains and plant flours, made primarily from eggs and cheese.


Ingredients

For the bread

  • 6 large large eggs, separated
  • 3 extra extra egg whites (carton whites are fine)
  • 1 cup shredded low-moisture mozzarella
  • 1/2 cup finely grated Parmesan or Asiago
  • 1 tablespoon unflavored gelatin or egg white powder for structure
  • 1/2 teaspoon cream of tartar for stable peaks
  • 1/2 teaspoon fine salt
  • 2 tablespoons melted butter or ghee, plus more for greasing

Optional flavors

  • a pinch garlic powder (optional)
  • a pinch onion powder (optional)
  • a pinch red pepper flakes (optional)


Instructions

Preparation

  1. Separate eggs. Place 9 whites in a clean glass or metal bowl. Save the 6 yolks in a separate bowl.
  2. Beat the whites. Add cream of tartar and whip on medium-high until you reach stiff peaks.
  3. Mix the yolk base. Whisk yolks with salt, gelatin or egg white powder, and melted butter. Stir in mozzarella and Parmesan until thick and slightly sticky.
  4. Fold gently. Add one third of the whipped whites into the yolk mixture to lighten it, then fold in the remaining whites with a spatula.
  5. Pan prep. Grease your pan and line the bottom with parchment.

Baking

  1. Bake in an air fryer at 300°F for about 20 minutes or in an oven at 325°F for 22 to 28 minutes until golden brown.
  2. Let it cool in the pan for 5 minutes, then cool on a rack for another 10 minutes before slicing.

Serving

  1. Slice and serve warm or toast lightly for extra crunch.

Notes

For variations, consider garlic herb, spicy jalapeño, or everything seasoning. Store in an airtight container in the fridge for up to 4 days or freeze slices with parchment between them.
