- 2 tablespoons olive oil

- 1 cup grated cheese (e.g., Gruyère or Swiss) (Cheese choice is flexible)

Preparation
- Preheat the oven to 400°F (200°C).
- In a large skillet over medium heat, heat the olive oil and butter.
- Add the thinly sliced onions, and season with salt and pepper. Cook, stirring occasionally, until the onions are caramelized, about 20-25 minutes.
- Stir in fresh thyme if using.
- Roll out the puff pastry and place it on a baking sheet lined with parchment paper.
- Spread the caramelized onions evenly over the pastry, leaving a small border around the edges.
- Sprinkle grated cheese on top of the onions.
- Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown.
- Allow to cool slightly before slicing and serving.
Notes
Cool any leftovers to room temperature, cover lightly, and refrigerate for up to 2-3 days. Reheat in a 350°F oven for 8-12 minutes for best results.
