- 4 cups vegetable broth (Can substitute chicken broth for a heartier flavor.)

- Optional: shredded chicken, ground beef, or sausage (For a heartier version.)
Instructions
Preparation
- In a large pot, sauté onion and garlic until soft.
- Add carrots and cook for a few more minutes.
- Stir in the chopped cabbage.
- Pour in the vegetable broth and diced tomatoes.
- Season with salt and pepper.
- Bring the soup to a boil, then reduce heat and let simmer for 25-30 minutes, until the vegetables are tender.
- If desired, add shredded chicken, ground beef, or sausage for a heartier option.

Notes
Cool the soup before storing in airtight containers. Keeps in the fridge for 3-4 days or freeze for up to 3 months. Reheat on low heat, adding water or broth if it thickens too much.
