Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the brown sugar and softened butter.
- Beat in the egg and vanilla until smooth.
- In another bowl, mix together the flour, baking soda, and salt.
- Gradually stir the dry ingredients into the wet mixture until well combined.
- Fold in the chopped rhubarb and nuts, if using.
- Drop spoonfuls of the dough onto a greased baking sheet.
- Bake for 10-12 minutes or until the edges are golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
