Ingredients
Dry Ingredients
- 1 cup whole wheat flour
- 1/2 cup protein powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Wet Ingredients
- 1/4 cup honey or maple syrup
- 1/2 cup Greek yogurt
- 1/2 cup milk (or almond milk)
- 2 large eggs
- 1 teaspoon vanilla extract

- 1 cup blueberries (fresh or frozen)

Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- In a bowl, mix together the flour, protein powder, baking powder, baking soda, and salt.
- In another bowl, whisk together the honey, yogurt, milk, eggs, and vanilla extract.
- Combine the wet and dry ingredients, then fold in the blueberries.
- Fill the muffin tin with the batter and bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool, then enjoy your hearty muffins!
Notes
Store cooled muffins in an airtight container at room temperature for up to two days. After that, move them to the fridge. They’ll keep in the fridge for about a week. For longer storage, freeze them. Wrap each muffin in plastic or place them in a single layer in a freezer bag.
