Ingredients

Zucchini Fries

  • 2 medium Medium zucchini (Look for firm zucchinis, about 6-7 inches long.)
  • 1 cup Almond flour (Provides bready crunch without carbs.)
  • 1/2 cup Finely grated Parmesan (Helps the crust get golden and crispy.)
  • 2 large Eggs (For dipping and helping the coating stick.)

  • 1 teaspoon Onion powder (Flavor enhancer.)
  • 1 teaspoon Smoked paprika (Adds a smoky flavor.)
  • to taste Salt (Use lightly at first.)
  • to taste Black pepper
  • spray Olive oil spray (For extra crispness.)

Instructions

Preparation

  1. Preheat your oven to 425 F (220 C) and line a sheet pan with parchment paper.
  2. Cut zucchinis into stick-shaped fries, sprinkle with salt and let them rest on a towel for 10 to 15 minutes to draw out moisture, then pat them dry.
  3. In a bowl, beat the eggs. In another bowl, mix almond flour, Parmesan, garlic powder, onion powder, smoked paprika, and black pepper.

Coating

  1. Dip each zucchini stick into the beaten egg, shake off the excess, then coat with the almond flour mixture, pressing lightly to adhere.
  2. Arrange the coated zucchini sticks on the prepared pan so they do not touch, and mist with olive oil spray.

Baking

  1. Bake in the preheated oven for 18 to 22 minutes, flipping halfway through, until the fries are deep golden and crisp.
  2. Salt to taste before serving and enjoy while hot.

Notes

To maintain crispiness, store leftovers on a wire rack and reheat in the oven or air fryer.
