Ingredients
Zucchini Fries
- 2 medium Medium zucchini (Look for firm zucchinis, about 6-7 inches long.)
- 1 cup Almond flour (Provides bready crunch without carbs.)
- 1/2 cup Finely grated Parmesan (Helps the crust get golden and crispy.)
- 2 large Eggs (For dipping and helping the coating stick.)
- 1 teaspoon Garlic powder (Flavor enhancer.)
- 1 teaspoon Onion powder (Flavor enhancer.)
- 1 teaspoon Smoked paprika (Adds a smoky flavor.)
- to taste Salt (Use lightly at first.)
- to taste Black pepper
- spray Olive oil spray (For extra crispness.)
Instructions
Preparation
- Preheat your oven to 425 F (220 C) and line a sheet pan with parchment paper.
- Cut zucchinis into stick-shaped fries, sprinkle with salt and let them rest on a towel for 10 to 15 minutes to draw out moisture, then pat them dry.
- In a bowl, beat the eggs. In another bowl, mix almond flour, Parmesan, garlic powder, onion powder, smoked paprika, and black pepper.
Coating
- Dip each zucchini stick into the beaten egg, shake off the excess, then coat with the almond flour mixture, pressing lightly to adhere.
- Arrange the coated zucchini sticks on the prepared pan so they do not touch, and mist with olive oil spray.
Baking
- Bake in the preheated oven for 18 to 22 minutes, flipping halfway through, until the fries are deep golden and crisp.
- Salt to taste before serving and enjoy while hot.
Notes
To maintain crispiness, store leftovers on a wire rack and reheat in the oven or air fryer.
