Description

A colorful and playful snack of mini peppers stuffed with a creamy cheese mixture, perfect for gatherings and picnics.


Ingredients

Main Ingredients

  • 1/2 lb mini sweet peppers
  • 1/4 cup fat-free feta cheese (Drain well if brined)
  • 2 pieces light Laughing Cow cheddar cheese wedges
  • everything bagel seasoning (To taste)
  • 1/2 tsp chili crunch (Optional for extra heat)
  • oil (drained)

Optional Garnishes

  • green onions or fresh herbs (parsley, cilantro) (For garnish)


Instructions

Preparation

  1. Slice the mini peppers in half lengthwise and remove any seeds. Lay them out on a serving platter or sheet pan.
  2. Mix the fat-free feta cheese with the light Laughing Cow cheddar cheese wedges in a small bowl.
  3. Pop the bowl with the cheese mixture into the microwave for about 30 seconds to soften the cheese.
  4. Add the everything bagel seasoning and chili crunch, and mix until well combined.
  5. Using a spoon, fill the pepper halves with some of the cheese mixture.

Serving

  1. Serve the stuffed mini peppers immediately and enjoy.
  2. Garnish with a sprinkle of herbs or green onions if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. For best texture, serve on the same day. To refresh them, let them sit at room temperature for 10–15 minutes before serving.
