Quick and delicious air fryer wraps filled with crispy chicken and stretchy mozzarella, perfect for a satisfying weeknight dinner.
Ingredients
Chicken Preparation
- 2 pieces small chicken breasts, sliced into thin cutlets (Thinner pieces cook faster and stay juicy.)
- 1 tsp garlic powder (Adjust to taste.)
- 1 tsp smoked paprika (Adjust to taste.)
- 1 tsp Italian seasoning (Adjust to taste.)
- 1 tsp kosher salt (Adjust to taste.)
- 0.5 tsp black pepper (Adjust to taste.)
Breading and Assembly
- 0.5 cup flour
- 2 pieces eggs, beaten
- 1.5 cups cornflake crumbs or panko (Cornflake crumbs make the crunch louder.)
- 1 to 1.5 cups shredded low moisture mozzarella (Low moisture melts cleanly and avoids soggy spots.)
- 8 to 10 inches flour tortillas, burrito style (Warm them for easy rolling.)
- 1 spray oil (avocado or olive) (Lightly spray the outside for a golden finish.)
Optional Extras
- 1 tbsp marinara sauce (Add inside each wrap, optional.)
- 1 tbsp pesto (Add inside each wrap, optional.)
- 1 tbsp ranch dressing (Add inside each wrap, optional.)
- 1 tbsp grated Parmesan cheese (Sprinkle on the outside, optional.)
Instructions
Prepare the Chicken
- Pat the chicken dry, then season with garlic powder, smoked paprika, Italian seasoning, kosher salt, and black pepper.
- Dredge in flour, dip in beaten egg, and coat in cornflake crumbs or panko, pressing crumbs on firmly.
Cook the Chicken
- Preheat the air fryer to 390°F (200°C) for 3 minutes and spray the basket.
- Air fry the chicken for 10 to 12 minutes, flipping halfway until the internal temperature reaches 165°F (74°C). Let rest for 2 minutes.
Assemble the Wraps
- Lay out warm tortillas, add mozzarella down the center, then the crispy chicken.
- Optional: Add marinara or pesto if desired.
- Roll burrito style by folding in the sides and rolling tightly.
- Place seam side down in the air fryer.
Finish Cooking
- Lower the air fryer temperature to 375°F (190°C) and lightly spray the outside of the wraps with oil.
- Dust with grated Parmesan and air fry for 5 to 7 minutes, flipping once, until the tortilla is golden and cheese is melty.
- Let rest for 1 minute before slicing.
Notes
Keep fillings in a tight line to avoid bursting, and warm tortillas for easier rolling. For extra crunch, consider mixing cornstarch with flour for breading.
